Our first pistachios were planted in the Paraje de la \"Casa Trujillo\". Its soft soil together with its large amount of limestone would contribute not only to the large size of its fruit, but also to its great flavor. <\/p>

<\/p>

From the first moment it was clear to us that we were located in a unique enclave, being one of the best areas in Spain for this crop. The pistachio plantation is located a few kilometers from the J\u00facar River, near the town of Jorquera, whose Almohad roots lead us to believe that centuries ago trees of this exquisite delicacy had already been planted. <\/p><\/div><\/div><\/div>\r\n\t\t<\/div>\r\n\t\t\r\n\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t

The variety with the largest planted area is \"Kerman\".<\/strong> It is the most widely planted variety in Spain, and although other more productive varieties are being planted, we value the quality and large size of its fruit, despite its reduced productivity. <\/p>

<\/p>

The natural area of \"Las Hoces del R\u00edo J\u00facar\",<\/strong> to which Jorquera belongs, is populated by the Pistacia terebinthus<\/em> or Cornicabra shrub, which is the rootstock by antonomasia generally used in Spain, and which has been occupying the slopes of this beautiful canyon for centuries. The desired pistachio variety is grafted onto it, and thanks to its resistance to limestone and drought, it is the perfect rootstock for this area. <\/p>

When referring to the history of the pistachio, we must take into account its origins, its introduction in the Iberian Peninsula and its cultivation today.<\/p>

Regarding its origins, there are references dating back to the year 7000 B.C. in Middle Eastern societies, specifically in Persia, what we know today as Iran. Evidence of their presence, dating back more than 5,000 years, has been found in geographical areas such as Syria, Afghanistan, Iraq and Turkey, among others. Finally, in the Bible (Genesis 43:11) there are also references to Pistacia Vera<\/em> (derived from the Persian pisteh or pesteh). <\/p>

The arrival of the pistachio to the West from the Middle East occurred first in Greece through the conquests carried out by Alexander the Great in the 3rd century B.C. Pistachios arrived in Italy under the rule of Emperor Tiberius (14 - 37 A.D.), and the Romans brought pistachios to Hispania. Pistachio cultivation began to develop in the Iberian Peninsula during Arab rule (711 - 1031 A.D.). <\/p><\/div><\/div><\/div>\r\n\t\t<\/div>\r\n\t\t\r\n\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t

<\/p>

During the period known as \"Al-Andalus\", the Arabs developed and extended pistachio cultivation in many Mediterranean regions. After the reconquest, the Christians began to eliminate the male trees as they considered them unproductive, putting an end to the pollination of the female trees, which led to the progressive disappearance of the pistachio tree in the peninsula. <\/p>

According to historians, it was not until the 1980s that pistachio cultivation was reintroduced. It began in the region of Catalonia, extending to Castilla-La Mancha, Andalusia and Extremadura, with the support of projects and subsidies from the autonomous communities themselves. <\/p>

Today, pistachios are already grown in North Africa and throughout southern Europe, as well as in other areas such as Australia, California and New Mexico.
